The sustainable heart of our distillery


Our distillery is much more than just a place where raw materials are turned into quality products: it is a fully-fledged ecosystem based on the principles of the circular economy. A production model in which nothing is wasted, everything is transformed, and every stage of the process helps to create value, while fully respecting the local environment.

It all begins in the fields, where our raw materials come from. After processing, what remains is not seen as waste, but as a valuable resource. The residues from the processing of lees, fruit and wine are reused to produce natural fertilisers that are returned to the earth, perfectly closing the loop and restoring nutrients to the soil from which everything began.

But we don’t stop there. As part of our production cycle, we also generate renewable energy: we produce biomethane and electricity, helping to reduce emissions and making our production process increasingly self-sufficient and sustainable. The energy we generate helps us to work, but also enables us to supply clean energy to the local community.

In our company, nothing is destroyed; everything is created. Every step, every by-product, every transformation is part of a virtuous cycle in which production is inextricably linked to the protection of the local environment.

Investing in the sun to build a more sustainable future


In line with our vision of an increasingly responsible industry, we have chosen to make a tangible investment in renewable energy, with the aim of reducing the environmental impact of our operations and moving towards greater energy self-sufficiency.

One of the most significant steps in this direction has been the installation of a state-of-the-art photovoltaic system at our production site, with an annual production capacity of 1,500 megawatt hours (MWh).

The system is designed to convert solar energy into clean electricity, which can be used directly in our industrial processes, helping to meet a significant proportion of the company’s energy requirements.

Thanks to this choice, we are significantly reducing our reliance on fossil fuels, making a tangible contribution to reducing CO₂ emissions and actively supporting the transition to a more sustainable energy model.

Biomethane

From materials to value


As part of our journey towards an increasingly sustainable and self-sufficient production model, we have chosen to invest heavily in renewable energy.

One of the most significant projects in this area is the construction of our new biomethane plant, a state-of-the-art facility that is of strategic importance to the entire supply chain.
Thanks to this plant, we are able to produce up to 1,000 cubic metres of biomethane per hour, amounting to a total of over 3,000,000 cubic metres per year, which is fed directly into the national grid and used primarily in the transport sector.

At the heart of it all is a virtuous cycle of recycling our production waste.
The biogas produced in our anaerobic digestion facility, which is rich in methane but also contains impurities such as CO₂, hydrogen sulphide and undesirable volatile compounds, is sent to the biomethane plant where it undergoes an upgrading process.

During this process, the biogas undergoes a series of physical and chemical treatments that selectively remove the unwanted substances, resulting in a gas with a high methane content (over 97%), with properties equivalent to those of fossil natural gas.
Only at this stage is the biomethane deemed suitable for injection into the national grid, where it can be used as an advanced biofuel.
For us, this project represents the perfect blend of environmental sustainability, technological innovation and the circular economy.

Cogeneration

Energy, recovery, efficiency


As part of our journey towards an increasingly sustainable, circular industrial model, we have developed a high-efficiency cogeneration system that produces electricity and heat by utilising internal sources and processes, in full accordance with the principle of maximising the use of available resources.

Energy is generated through:

two turbo-alternators, each with a capacity of 1,450 kW, powered by high-pressure steam generated by the thermal power station;

two internal combustion engines, each with an output of 1,131 kW, fuelled by biogas from our anaerobic digestion plant, which uses organic waste from our production processes and converts it into a valuable source of renewable energy.

With a view to efficiency and total recovery, the system is complemented by:

a heat recovery boiler, which uses hot engine exhaust gases to generate low-pressure steam, thereby reducing waste;

a thermal energy recovery system that uses cooling water to preheat the plant’s water, thereby optimising energy consumption and improving the system’s overall efficiency.

This integrated model enables us to significantly reduce our reliance on fossil fuels, cut climate-changing emissions and strengthen our commitment to a regenerative industrial economy, where nothing is wasted and everything is transformed.

Fertilizer

From the field, back to the field: a cycle that creates life


In our production process, every organic by-product is seen as a resource to be utilised, not as waste.
Using an advanced purification and treatment system, we transform our production waste into a high-quality natural fertiliser for agricultural use.

Made exclusively from agricultural raw materials, this fertiliser provides a practical, environmentally friendly solution to the soil’s nutritional needs.

Many agronomic studies have shown that its nutrient content is comparable, if not superior, to that of traditional mineral fertilisers. Furthermore, it improves soil structure, promotes microbial activity and stimulates the production of antioxidants in plants, thereby contributing to healthier and more resilient crops.

In this way, we bring the production cycle full circle. The fruits that the earth provides us with become a precious resource: we process them with care and return them to the earth as nourishment, so that life may continue to flourish, completing a virtuous cycle.

A perfect, tangible example of the circular economy, where nothing is wasted and everything is reused to create value.

Through this tool, we share our achievements, our future goals and the concrete steps we are taking to reduce our environmental impact and improve the well-being of those who work with us and live in our local communities.

From energy savings to the recovery of our production waste, from the generation of renewable energy (such as biomethane and electricity) to the responsible use of natural resources, right through to good agricultural practices and the development of the local area: all of this forms part of a process in which we play an active role in the transition towards a fairer and more circular economy.

The Sustainability Report is not an end in itself, but a compass that guides our decisions. Because we believe that doing business today means creating lasting value for people, the environment and future generations.
